Chicken Parm Tortilla Wrap | In The Kitchen with Vesna

So I was hangry and wanted I something substantial and deliciously warm at the same time...here comes the tortilla hack into play! For some reason I always have extra chicken cutlets in the freezer (smart girl 😁), and plenty of cheese in my fridge and fresh herbs.
So here it is, a personal crispy, cheesy, fresh tasting Chicken Parm wrapped in perfect tortilla pocket.

Yields1 Serving
 1 medium to large tortilla, (my tortilla was a little small but I was determined to fit everything it it.)
 4 tbsp marinara sauce
 2 tbsp grated Pecorino Romano
 1 breaded chicken cutlet, ( whole or sliced)
 ½ cup grated mozzarella
 Fresh basil leaves
 Cooking spray

Place your tortilla on cutting board, slice down one side and divide your ingredients into quarters. Use cooking spray to lightly coat the pan. Fold each quadrant over each other and place in the pan over medium heat. Cover with a lid and warm through 4-5 minutes per side. Serve with extra marinara sauce for dipping. You can make several of these at once by using a sheet pan lined with parchment paper....loosely cover with foil and bake for 20 - 25 minutes at 350 degrees, flipping once halfway through.
