Elevated Chicken Salad Sandwich | In The Kitchen with Vesna

Looking for a super simple and yummy dinner tonight? This open face chicken salad sandwich can be elevated with just a few tasty additions. No cooking required 🤗

 1 organic antibiotic free rotisserie chicken(pull meat off the bone and shred it slightly, then place what you’ll be using in a bowl) You can freeze remaining chicken, for another dish). I usually use about half of the meat for the sandwiches.
 2 slices of rye bread or favorite bread
 2 stalks celery, chopped
 ½ cup your favorite mayonnaise
 1 jalapeño, seeded and finely chopped
 1 tbsp Italian parsley chopped + more for garnish
 1 tsp Borsari cracked black pepper(it also contains garlic, spices, & sea salt) Garlic Everything Sauce, @SirKensingtons brand is a nice addition to spread on your bread. Its delicious sauce has savory garlic, hints of preserved lemon and warm spice.
 3 -4 Butter lettuce leaves
 1 tbsp chives, chopped

In a bowl add your chicken, celery, mayonnaise, jalapeño, parsley, Borsari cracked pepper seasoning and mix together.

Build your sandwich; toast your bread, spread a good layer of the garlic everything sauce, lay the lettuce, spread the chicken mixture evenly on each sandwich and sprinkle the chopped chives.

Optional Side; cherry tomato salad topped with Burrata cheese, salt, fresh ground pepper and a drizzle of @Lucini delicate lemon extra virgin olive oil and a sprinkle of chopped Italian parsley …my favorite!
