Fresh Fettuccine Pasta with Spinach | In The Kitchen with Vesna

This super simple and satisfying dinner will take the stress out of planning a weeknight dinner, serve with sliced heirloom tomatoes and dinner is done!

Yields4 Servings
 2 9 ounce packages fresh fettuccine pasta
 4 tbsp unsalted butter
 3 cloves garlic finely chopped
 Zest and juice one lemon
 1 tbsp fresh thyme chopped
 1 cup chicken broth
 1 cup white wine (you can substitute with chicken broth)
 1 tsp salt
 ½ tsp fresh ground pepper
 ½ cup finely ground Parmesan cheese plus Parmesan shavings using a vegetable peeler for garnish
 5 oz fresh baby spinach
 Reserve 1⁄2 cup pasta water
 2 tbsp fresh basil chopped

✨In a large, deep skillet on medium heat melt butter. Add the garlic, lemon zest and thyme and sauté for a few minutes.

✨Add the chicken broth, white wine, lemon juice, salt and pepper and cook for 3–5 minutes and let simmer.

✨Meanwhile bring a large pot of water to a boil, add salt. Cook the fresh pasta under 2 minutes and reserve some pasta water.

✨Drain the pasta and transfer to the simmering sauce, add the fresh spinach and grated cheeses. Add pasta water if needed.

✨Using tongs gently incorporate the ingredients together. If needed add the pasta water to loosen the sauce.

✨Transfer to a large serving bowl and add Parmesan shavings and garnish with basil.
