Raspberry Cake | In The Kitchen with Vesna

I have to tell you the house smells so amazing as this Raspberry Cake is baking, its moist, delicious and easy to make!

Yields8 Servings
 ¼ cup cold unsalted butter cubed, plus extra, to grease the pan
 ½ cup fine sugar or granulated sugar
 1 cup all purpose flour
 1 tsp baking powder
 2 eggs, at room temperature
 1 ½ cups fresh or frozen raspberries
 ¼ cup thinly sliced almonds
 Powdered sugar for dusting

🌺Preheat oven to 350 degrees.
🌺Grease a 8 inch springform cake pan with melted butter, then line base with parchment paper.
🌺Place cubed butter, sugar, flour and baking powder in a food processor. Process until evenly combined and mixture resembles fine breadcrumbs.
🌺Add eggs and pulse until smooth and just combined.
🌺Spoon mixture into prepared pan and use a spatula to smooth surface.
🌺Scatter evenly with raspberries, and then use back of a clean spoon to press raspberries into cake batter. Sprinkle with almonds.
🌺Bake for 50-55 mins, until golden and a skewer inserted into centre comes out clean.
🌺Let cake sit in pan for 5 minutes before removing side of pan and placing cake (still on base) on a wire rack. Dust with icing sugar and serve warm or at room temperature.
