Everyone will love these Seasoned Baked Potatoes and Crispy Potato Rounds
This side dish goes well with any meat, especially Beef Tenderloin!

Yields8 Servings
 4 large Idaho or Russet potatoes, roughly the same size so they cook evenly
 1 tbsp Montreal steak seasoning blend
 1 tsp Tuscan seasoning blend
 olive oil
Crispy Potato Rounds
 4 medium to large Yukon potatoes (or any variety of potatoes you prefer), cleaned and scrubbedUse 4 to 5 potatoes
 Organic olive oil cooking spray
 1 tsp garlic salt
 ½ tsp Everything Seasonings blend from Trader Joe’s with grinder(it has sea salt, mustard seeds, black peppercorns, coriander, onion, garlic, paprika and chili peppers)
 Chopped chives for garnish

Preheat the oven to 425 degrees.

Scrub and clean the potatoes and with a fork poke a few holes in each potato.

Place the potatoes in a microwave/oven safe casserole dish, rub with olive oil and add 2 tablespoons of water. Cover with microwave safe plastic wrap and microwave for 10 minutes then carefully (as there will be steam and it will be very hot) remove the plastic wrap.

Flip the potatoes and again cover with plastic wrap.
Microwave an additional 7 minutes and when done the potatoes should be easily pierced with a fork. If necessary continue to microwave in 1 minute bursts until the potatoes are cooked through.

Before finishing in the oven drizzle some more olive oil, sprinkle with Montreal seasoning and Italian seasoning blend and bake for 25–30 minutes till crispy. Serve with sides of butter, sour cream, chopped chives!

Combine the seasonings mix in a small bowl. Heat oven to 425 degrees.

Leaving the skin on, slice the cleaned potatoes 1⁄4” thickness and place in a large bowl with cold water to remove the starch. Drain the potatoes removing all of the water.
Line a baking sheet and spread the potato slices in a single layer. 🔸Thoroughly spray the potatoes with the cooking spray and then sprinkle the seasonings on top. Flip the potatoes to the unseasoned side and do the same thing.

Roast for 30–35 minutes, no need to flip them as the bottom will get crispy as well. Transfer to a serving platter and sprinkle with chopped chives.
