1butternut squash, peeled, seeds removed and cut into large cubes(try to keep them the same size so they cook evenly)
2zucchini cut into 2 inch pieces(scrape & discard some of the flesh near the seeds because it holds a lot of moisture)
1bunch of thick asparagus, rinsed well and cut the tough stems off (about 2 inches from the bottom)
1red bell pepper, cored, seeded and cut into large pieces1-2 peppers
4tbspextra virgin olive oil4-5 tbsps of oil
1tbspItalian season blend
1tbspbrown sugar
Kosher salt and fresh ground pepper to taste

Preheat oven to 425 degrees.
Arrange the vegetables in a sheet pan lined with parchment paper, drizzle the olive oil over all the vegetables, sprinkle the Italian seasoning blend and salt and pepper over all the vegetables. Using your hands gently work the seasonings into the vegetables. Lastly sprinkle the brown sugar just over the butternut squash.
